Andrew Update!

Everyone.... Great News! Andrew is now in CATS at Salt Lake Metro. He called last night to tell me they came into minimum where he has been and told him to roll up his things because he was being moved into CATS. For those of you that don't know what CATS is, it's an "in-house" incarceration rehabilitation program that the court is requiring him to fulfill as part of his incarceration. He's been in medium, then minimum security for the last 90 days or so before fulfilling this part of the sanction. We have been praying for this to happen. There was a chance because the CATS program had such a long waiting list that he may not get in for a few more months, or he would be released out of Salt Lake Metro on an ankle monitor and required to fulfill a treatment program outside. We feel this is the best for him right now, getting into CATS. He was in good spirits when he called - so I have peace of mind with everything. I told him to give it everything he has because this is the most important part of his recovery - and to continue to do the spiritual work that he's been working on. His 20th Birthday is this Sunday, March 30th and I want to thank everyone that has sent him a birthday card. It will mean so much to hear from his family whom he misses very much. He did say last night that right now he is struggling more because he misses everyone deeply. His Dad, Trevor and I are going to visit him on his Birthday - his visiting days have been changed to Wednesdays and Sundays - so it worked out. Thanks for all your prayers. Keep em up please... he's coming along so well.

Strawberry Marscarpone Cupcakes... anyone want one?

I spotted this on The Food Network - Giada, of course. So you KNOW this is going to be fantastic - that is, if you love cupcakes.. and I do. It's got to be out of this world if it has marscarpone cheese in it, right?

1 box vanilla cake mix (like Duncan Hines Moist Deluxe French Vanilla cake) 1 (8-ounce) container mascarpone cheese, chilled 1/2 cup thawed and drained frozen strawberries 1/4 cup sugar, plus 1/2 cup 1 tablespoon lemon juice 1/4 cup water 1 teaspoon vanilla extract 2 cups confectioners' sugar

Special equipment: 1 muffin tin

Make the cupcakes according to package instructions. Lightly grease the muffin tin and fill the batter almost to the rim of each muffin cup. Bake according to package directions and let cool.
In a food processor combine the mascarpone cheese, strawberries, 1/4 cup sugar, and lemon juice. Process the mixture until smooth. Transfer the strawberry mixture to a pastry bag fitted with a small tip. Push the tip gently into the bottom of a cupcake and squeeze in the strawberry mixture until the cupcake plumps. Continue with the remaining cupcakes.
In a small saucepan bring the 1/2 cup sugar, water, and vanilla extract to a simmer over medium heat. Simmer until the sugar is dissolved. In a medium bowl combine the vanilla syrup with the confectioner's sugar. Stir until smooth. Working quickly, use a rubber spatula spread the icing on the top of the cupcakes. If the icing begins to firm up, place in the microwave for a few seconds to warm up again.
